This sparkling wine, made exclusively from the Loureiro grape variety, is a reflection of the unique terroir of the Lima Sub-Region. The vineyards grown in branches, the northern and eastern sun exposure, and the soils with the presence of schist give the grapes ideal characteristics for the production of this high quality sparkling wine.
The harvest is manual, carried out in 20 kg boxes, with total de-stemming of the grapes. After decantation, fermentation takes place in stainless steel, followed by an 8-month aging period on total lees, with batonnage in the first 5 months. Subsequently, the wine goes through the classic method (drawing) and ages for 22 months until disgorgement.
