This wine is made from the Cainho grape variety, a forgotten treasure from this valley. The vineyard was planted on terraces with schist presence and excellent sun exposure, favoring its development and resulting in specific characteristics like high sugar and acidity levels. Grapes are manually harvested in 20 kg boxes, followed by total destemming and fermentation in French oak barrels. The wine aged on total lees for several months, with regular bâtonnage after the malolactic fermentation. After blending and static clarification, this vintage aged for 6 months in the bottle before labeling and release.
